1 kg mussels, scrubbed and beards removed
1 large handful Thai basil leaves
4 stalks fresh lemon grass, thinly sliced
4 garlic cloves
1. In a large pot, add the mussels and herbs - lemon grass, basil and garlic.
2. Cover and cook on a medium heat, until the mussels have opened, 4 to 5 minutes. Discard any unopened mussels.
3. Transfer the mussels to a platter. Set the mussels in half-shells on a serving dish and sprinkle with sliced basil, if desired. Serve with Seafood Sauce.
